A Legend In Its Own Time In 1982, the Southern California Restaurant Writers named The Trabuco Oaks Steak House “A Legend In Its Own Time.” It was an exhilarating honor, but also a humbling one. After all, being a legend in your own time is a pretty heavy responsibility. So we asked ourselves, what did we do to become a legend? On June 28, 1968 Eleanor, Duke and Randy Sherod opened Trabuco Oaks as a snack bar serving campers from O’Neill Regional Park and Trabuco Canyon residents. That worked out pretty well, so they decided to serve dinner as well. Now, there are dinners and there are DINNERS. We decided ours would follow two rules: keep it simple, and do it right. Chef Pietro Cinus grew up surrounded by the beautiful countryside of the Island of Sardinia, filled with rows of wild asparagus and bright green chard overlooking the Mediterranean Sea. Here, he learned the secrets to creating amazing Sardinian recipes from his mother, Maria. She prepared her signature dishes with ingredients from the surrounding land and sea, such as locally caught fish, foraged wild mushrooms, and freshly picked greens. As a young, enterprising teenager, Pietro moved to Tuscany at 14 to pursue a career in woodworking. However, thanks to his friend, he quickly became interested in the culinary traditions of his new home. Working in a traditional Tuscan restaurant, Pietro cultivated his skills and eventually became known for his inventive takes on classic Italian cuisine. [read more]

Tresino's Fresh Italian

Tresino's, a family owned and operated business, originated three generations ago in St. Louis, MO. in a predominately Italian community called "The Hill". It was in the basement of Nana Giovannina Mazzocchio's modest shotgun-style home that she perfected her family recipes. She even furnished many surrounding gourmet Italian restaurants with her well-loved homemade pastas. Nana Giovannina owned and operated her first restaurant in 1964. Her restaurant was very popular and frequented by many celebrities such as Frank Sinatra, Dean Martin, Sammy Davis Jr., Ginger Rogers, and Betty Grable to name a few. In 1982 her son, Lorenzo Mazzocchio, wife Sheryl, along with their nephew, opened Pasta House Ferrantelli in San Juan Capistrano, preparing the same generational recipes along with those he developed himself. In 1986 he moved his small twelve table restaurant into the Dana Point Marina and Ristorante Ferrantelli became one of the most popular four star fine dining Italian restaurants in Orange County. In 1991 they opened Mangia Bene Ristorante in Laguna Niguel, making this restaurant one that would cater to the casual Southern California lifestyle. Now Nana Giovannina's grandchildren, Gino and Theresa, son and daughter to Lorenzo and Sheryl, are bringing to the Inland Empire that same fresh Italian food experience! Please enjoy these authentic family recipes from Nana Giovannina and the entire Mazzocchio family. Grazie Mille e Saluto Tutti [read more]
