About The Mexico Cafe In 1951, The Mexico Café was founded by Ernesto and Feliciana Gaitan in San Bernardino. With the support of her husband, Feliciana ran the operation in an era during which women in business was not a common occurrence. However, Ernesto recognized that his wife had a natural instinct for business and work ethic that is needed in any successful endeavor. He was right. Feliciana, with 5 children at home, was able to tend to her family and still catapult The Mexico Café to success. Although all 5 of her children worked at the restaurant at some point in their lives; it was her youngest son and daughter-in-law, Art and Julia, that eventually purchased the café located in the west-side of San Bernardino City and ran the operation together. In 1974, Arthur and Julia Gaitan relocated the Café to a new location which they designed and built in the north-side of San Bernardino on Highland Ave. The restaurant was a huge success and has remained an icon and one of the few longest running restaurants in the City of San Bernardino. The Gaitan Family still owns and operates the café as the fourth generation embarks on continuing the visions of their great grandparents. The year was 1997. The place, a little town in southern Utah called St. George. A lovely couple named Steve and Patricia Stanley started a restaurant called Cafe Rio Mexican Grill. Cafe Rio served authentic dishes derived from inspired recipes and traditional cooking of Northern Mexico’s Rio Grande region, Southern Texas, and New Mexico. Central to every bite was the belief that every ingredient must be fresh and made fresh to order. And you know what? People loved it. They couldn’t get enough of it. So much so, that one restaurant became six. In 2004, these six little restaurants caught the attention of a fine gentleman named Bob Nilsen. He purchased Cafe Rio from the Stanleys with the idea of spreading the love of making this fresh Mexican food to everyone in and around Utah and beyond. He made sure to keep the mantra of “fresh food, made fresh” at the very core of the brand. No freezers. No microwaves. Nothing premade. Mr. Nilsen has since moved on and a new team of quality-obsessed leaders have taken the wheel. To this day, our staff still begins each day, bright and early, hand-squeezing limes, hand-scooping avocados, chopping fresh vegetables, simmering sauces, and preparing the chef-inspired recipes our fans have come to love. DR. Drew Nystrom, DAOM, L.Ac. CMT I was introduced to massage at a young age but it wasn't until the age of 21 that I enrolled in a year long massage program. I graduated with over 1000 hrs of massage training and with Honors from Maric College (now Kaplan) acquiring a Holistic Health Practitioners Degree. A few years later, after working in the massage field, I knew there was more that I needed to learn. While researching possible schools to further my knowledge I came across Emperors College of Traditional Oriental Medicine. I found my calling. Three years into the four year program, I became severely ill and anything that I ate would go right through me. I lost 30 pounds in a month. A Colonoscopy and Small Intestine Barium Xray revealed major inflammation and ulceration of my Digestive tract. I was diagnosed with Crohn's Disease, an Inflammatory Bowel Disease that can involve the entire digestive tract. The doctors prescribed serious medication that stopped the leak (pun intended) and told me to stay away from vegetables and fruits (basically anything healthy). This didn't sit well with me. I understood why those foods would and could make my situation worse at that time but to forgo the life giving nutrients within said foods would surely lead to worsening of this condition. Indebted to all my doctors and western medicine for saving my life; I knew there was a better way to manage and treat my condition in the long run. My time at Emperors allowed me to work with some of the greatest doctors alive today and some that have since passed on from this world. I was also able to work within the LA Community at the schools onsite community clinic and at UCLA, Arthur Ashe Medical Center. Four incredible years later I graduated Magna Cum Laude from Emperors College in 2011 with my Masters in Acupuncture and Oriental Medicine. In 2016 I finished the Doctoral Program at Emperors College. This program catapulted my understanding of the field of Chinese Medicine as well as western medical sciences. It also put me in contact with some more brilliant minds in the field. [read more]
