Vince’s Spaghetti restaurants are the only restaurants for Real Italian Spaghetti. When Vince’s Spaghetti first opened in Ontario, California in September 1945; it was a simple, six stool, open air restaurant without a kitchen. Back then, Grandma Rose prepared all of the food in her kitchen 50 yards away and hand carried it to the customers. The original Vince’s Spaghetti was located on Highway 70-99, which was the main road to Palm Springs at the time. The business was run by three brothers and their wives. By 1968, Vince’s was billed as the largest spaghetti restaurant west of the Mississippi River (with a kitchen!), seating more than 400 people. Today, because of your patronage, we’ve grown to 3 locations, all family owned and operated, still serving Grandma Rose’s original recipes. The story of Calisson began on a warm day of spring cleaning at my childhood home in the North of France two decades ago. I had hardly begun my endeavor in the attic when a single ray of sunlight drew my attention to a small box peeking out from behind a wicker trunk.I slowly lifted the top off the box and delicately moved aside the tissue paper to reveal a pair of baby shoes. The two most beautiful little shoes, sleepily nestled together in the paper. Beneath the shoes laid a yellowed photograph of a small boy in a buttoned coat with a caption penned across the back in perfect script: “1942… Pierre, 2 years old”. These were my dad’s baby shoes.
