About The Mexico Cafe In 1951, The Mexico Café was founded by Ernesto and Feliciana Gaitan in San Bernardino. With the support of her husband, Feliciana ran the operation in an era during which women in business was not a common occurrence. However, Ernesto recognized that his wife had a natural instinct for business and work ethic that is needed in any successful endeavor. He was right. Feliciana, with 5 children at home, was able to tend to her family and still catapult The Mexico Café to success. Although all 5 of her children worked at the restaurant at some point in their lives; it was her youngest son and daughter-in-law, Art and Julia, that eventually purchased the café located in the west-side of San Bernardino City and ran the operation together. In 1974, Arthur and Julia Gaitan relocated the Café to a new location which they designed and built in the north-side of San Bernardino on Highland Ave. The restaurant was a huge success and has remained an icon and one of the few longest running restaurants in the City of San Bernardino. The Gaitan Family still owns and operates the café as the fourth generation embarks on continuing the visions of their great grandparents. Since 1951, The Mexico Café has maintained it's success by adhering to the guidelines provided by its founders, Ernesto and Feliciana Gaitan; providing a clean, safe establishment that is family oriented while providing authentic Mexican cuisine. In the months following the opening of our new cafe, we redecorated and created the place of our dreams: charming, cozy, and casual. Somewhere that WE would like to hang out, where we could share a meal, conversation, and a bottle of wine . Thus was born "the Nook". While our customers would wait, we witnessed them unwinding and taking a moment for 'themselves'. This was when we knew we had just birthed the Nook. As we continued to develop the concept of the nook one evident topic that kept coming up was the importance of offering a space for people to relax, rejuvenate, and take some time for themselves. As a professional catering company the owner, Ronny Tompot, expressed that he noticed there aren't many rehearsal dinner spaces in Temecula and the places that are generally suggested have minimums and lack an interest in offering a space for people to unwind (Keyword) with their loved ones. Dr. Whitney Boulton is a born and raised Californian with a passion for outdoor activities, travel, live music, and geeking out about anatomy. Her undergraduate studies earned her a Bachelors of Science degree in Biology from the University of Redlands. In grad school, she earned her Doctorate of Chiropractic, graduating top of her class, Suma Cumlade, from Life Chiropractic College West. Along her educational journey she has taken two, 200hr Yoga Teacher Trainings, the first with Troy McPeak in Unified Yoga, and the second with Kelley Doyle in Prana Vinyasa. Through her ten plus year journey, she has gotten to experience the benefit that a weekly yoga practice provides on, and off, a mat. This experience has been so profound that she has created her dream practice around blending her two passions, chiropractic and yoga. Dr. Whitney has long seen the need for our current healthcare system to take on a preventative approach, rather than reactionary. She recognizes the importance of western Medicine and is striving to find a better balance between health care professionals. It is her core belief that healing takes a team, and that there is no “one way” to help a person. Rather, her dream is to have many healers collaborating together.
