Cafe Rio Fresh Modern Mexican
The year was 1997. The place, a little town in southern Utah called St. George. A lovely couple named Steve and Patricia Stanley started a restaurant called Cafe Rio Mexican Grill. Cafe Rio served authentic dishes derived from inspired recipes and traditional cooking of Northern Mexico’s Rio Grande region, Southern Texas, and New Mexico. Central to every bite was the belief that every ingredient must be fresh and made fresh to order. And you know what? People loved it. They couldn’t get enough of it. So much so, that one restaurant became six. In 2004, these six little restaurants caught the attention of a fine gentleman named Bob Nilsen. He purchased Cafe Rio from the Stanleys with the idea of spreading the love of making this fresh Mexican food to everyone in and around Utah and beyond. He made sure to keep the mantra of “fresh food, made fresh” at the very core of the brand. No freezers. No microwaves. Nothing premade. Mr. Nilsen has since moved on and a new team of quality-obsessed leaders have taken the wheel. To this day, our staff still begins each day, bright and early, hand-squeezing limes, hand-scooping avocados, chopping fresh vegetables, simmering sauces, and preparing the chef-inspired recipes our fans have come to love. The story begins in Prescott, Arizona... The Jesus People Movement was sweeping America and multitudes of young people were being profoundly saved and converted to Christ. While many of the traditional churches closed their doors to the long haired, denim clad hippies, Pastor Wayman Mitchell received them with open arms. Pastor Mitchells solid grounding in the Word of God and his passion to take the Gospel into all the world was soon imparted in to the hearts of many zealous new converts. In a few short years, several young couples were launched into surrounding cities to pioneer new churches. In 1976, following the pattern that had been set in Prescott AZ, a couple was sent into Tempe, AZ to begin a new church. From there a couple was sent into San Diego, CA. Another church was formed when San Diego sent a couple into Imperial Beach, CA. It was in the Imperial Beach church that Uriel Servin Jr was saved, baptized, and was eventually sent to assume leadership of the church in Temecula, CA from Pastor Justin Carl who answered the call to go to Betim, Brazil. Welcome Our story begins when founder, Jim Carter, was an eight-year old growing up in Ohio. He would gather seeds from the maple tree outside his home and plant them in his relatives' yards. This was an early indication that Jim loved digging in the earth and watching things grow. In 1981, Jim's father introduced him to a pristine region in Southern California with views for miles of the valley below. Perhaps he reminded Jim of his love for growing things as he encouraged him to purchase 400 acres here, which would later become our award-winning vineyards in the Southern California Temecula Valley. As Jim tells it, "I wanted to share the complete wine country experience. Guests not only enjoy the finest wines paired with the finest foods, but they stay in a private villa right in the middle of a vineyard.
