The Cheesecake Factory
In the 1940s, Evelyn Overton found a recipe in her local Detroit newspaper that inspired her “Original” cheesecake. Everyone loved her recipe so much she decided to open a small bakery, but eventually gave it up to focus on raising her children, David and Renee. She moved her baking equipment to her basement kitchen and continued to sell cakes to some of the best restaurants in town. In 1972, Evelyn and her husband Oscar moved to Los Angeles to try one last time to have their own business. With the last of their savings, they opened The Cheesecake Factory Bakery and began selling Evelyn’s cheesecakes to restaurants throughout L.A. Their son David decided to open a restaurant in Beverly Hills in 1978 to showcase his mother’s cakes. Somehow, he just knew that a restaurant with an extensive dessert menu would be a hit. In 1976, Bernard (Ben) Cammarata, General Merchandising Manager of Marshalls at the time, was recruited by discount retailer, Zayre Corp.,1 to develop and spearhead the launch of a new off-price chain selling family apparel and home fashions. Under Mr. Cammarata’s leadership, TJ Maxx was born, with its first stores opening in 1977. In the late 1980s, Zayre was restructured and spun off three of its brands — TJ Maxx, Hit or Miss, and Chadwick’s of Boston — which served as the initial retail banners of what would become The TJX Companies, Inc. The story of Calisson began on a warm day of spring cleaning at my childhood home in the North of France two decades ago. I had hardly begun my endeavor in the attic when a single ray of sunlight drew my attention to a small box peeking out from behind a wicker trunk.I slowly lifted the top off the box and delicately moved aside the tissue paper to reveal a pair of baby shoes. The two most beautiful little shoes, sleepily nestled together in the paper. Beneath the shoes laid a yellowed photograph of a small boy in a buttoned coat with a caption penned across the back in perfect script: “1942… Pierre, 2 years old”. These were my dad’s baby shoes.
